These gluten-free Spinach Oatmeal Pancakes are always devoured in 0.5 seconds in my house, and I love it. If you haven’t noticed, I really love making super sneaky recipes, jam-packed with veggies, that everyone loves. What can I say?! If my kids would rather eat their veggies smothered in syrup or studded with chocolate chips, I’m ok with that.
